Hospitality & Catering Intermediate & Advanced Apprenticeships

These Apprenticeships will develop the skills required to build a career within the hospitality sector. There are a number of different pathways available; which route that you study towards will depend on your job role. The range of roles within the industry include Waiters/Waitresses, School Cooks, Kitchen Assistant, Commis Chef, Bar Manager, Sous Chef and Restaurant Manager.

Apprenticeship duration

12 to 24 months

What will I study?

PROFESSIONAL COOKERY

Whilst studying an Apprenticeship you will work towards demonstrating your knowledge (at college) and competence (at work) in the following units:

Intermediate Apprenticeship units include:

  • Maintaining food safety when storing, preparing and cooking food
  • Preparing and cooking fish, meat and poultry for basic dishes
  • Preparing, cooking and finishing basic hot sauces
  • Preparing, cooking and finishing bread and dough

Advanced Apprenticeship units include:

  • Maintaining food safety when storing, preparing and cooking food
  • Preparing and cooking fish, meat and poultry for basic dishes
  • Preparing, cooking and finishing basic hot sauces
  • Preparing, cooking and finishing bread and dough
  • Preparing and cooking pastry

FOOD PRODUCTION AND COOKING

Whilst studying an Apprenticeship you will work towards demonstrating your knowledge (at college) and competence (at work) in the following units:

Intermediate Apprenticeship units include:

  • Maintaining food safety when storing, preparing and cooking food
  • Processing and cooking various basic hot and cold food and sandwiches
  • Maintaining an efficient use of food resources

HOSPITALITY SERVICES

Whilst studying an Apprenticeship you will work towards demonstrating your knowledge (at college) and competence (at work) in the following units:

Intermediate Apprenticeship units include:

  • Maintenance of a safe, hygienic and secure working environment
  • Working effectively as part of a hospitality team
  • Give customers a positive impression of yourself and your organisation

FRONT OF HOUSE

Whilst studying an Apprenticeship you will work towards demonstrating your knowledge (at college) and competence (at work) in the following units:

Intermediate Apprenticeship units include:

  • Maintaining a safe, secure and hygienic environment
  • Preparing tables and serving food at the table
  • Preparing and clearing the bar area and serving alcoholic and soft drinks
  • Supervising functions and food service

HOSPITALITY SUPERVISION AND LEADERSHIP

Whilst studying an Apprenticeship you will work towards demonstrating your knowledge (at college) and competence (at work) in the following units:

Advanced Apprenticeship units include:

  • Maintaining a safe, secure and hygienic environment
  • Preparing tables and serving food at the table
  • Supervising the preparing and clearing the bar area and serving alcoholic and soft drinks
  • Supervising functions and food service

How will I be assessed?

The courses are assessed through observation, knowledge questions and the development of a portfolio of evidence to demonstrate competence. There is also a requirement to complete the following elements: employee rights and responsibilities workbook and personal learning and thinking skills.

Entry requirements:

GCSE Grade C (or equivalent) in Maths and English. Vocational Assessment required.

What next?

We offer a range of NVQ only options which can be delivered solely in the workplace or you could move onto Higher Education, an NVQ Level 4 or a Foundation Degree.
